Ingredients

1 medium head of cabbage, chopped

1 onion, chopped

2 carrots, peeled and sliced

2 celery stalks, chopped

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

4 cups vegetable or chicken broth

1 teaspoon dried thyme

1 teaspoon dried basil

Salt and pepper, to taste

2 tablespoons olive oil

1 bay leaf (optional)

Instructions

  1. Prepare the Vegetables:
    Chop the cabbage, onion, carrots, and celery. Mince the garlic.

  2. Sauté Aromatics:
    In a large pot, heat olive oil over medium heat. Add the onion, garlic, and celery. Sauté for about 5 minutes until softened.

  3. Add Remaining Ingredients:
    Stir in the carrots, cabbage, diced tomatoes, vegetable or chicken broth, thyme, basil, bay leaf, salt, and pepper. Bring to a boil.

  4. Simmer the Soup:
