Ingredients

  • 3 overripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 3/4 cup granulated sugar or brown sugar
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1/2 cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • Optional mix-ins: 1/2 cup chopped walnuts or pecans, chocolate chips, or shredded coconut

Instructions

  2. In a large bowl, mash the bananas until smooth.
  3. Add sugar, eggs, buttermilk, melted butter, and vanilla. Stir until fully combined.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon (if using).
  5. Add dry ingredients to the wet mixture and stir until just combined. Do not overmix.
  6. Fold in optional mix-ins, if using.
  7. Pour batter into prepared loaf pan and smooth the top.
  8. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Use half whole wheat flour for a heartier texture.
  • Swirl in peanut butter or Nutella for added richness.
  • Top with coarse sugar or chopped nuts for a crunchy finish.
  • Make muffins by baking in a muffin tin for 18–22 minutes.
  • Add a cream cheese swirl for a tangy contrast.
