Buffalo Chicken Taquitos are crispy, cheesy, and packed with spicy buffalo chicken filling. Rolled in tortillas and baked, fried, or air-fried, they’re the perfect game day snack, party appetizer, or quick dinner.

Ingredients

  1. 2 cups cooked shredded chicken (rotisserie or homemade)
  2. 1/2 cup buffalo sauce
  3. 4 oz cream cheese, softened
  4. 1 cup shredded cheddar or Monterey Jack cheese
  5. 1/2 tsp garlic powder
  6. 2 green onions, chopped (optional)
  7. 12 small flour tortillas (soft taco size)
  8. Cooking spray or oil (for baking or frying)
  9. Optional dips: ranch or blue cheese dressing

Instructions

Preheat oven or heat oil: For baking, preheat oven to 425°F (220°C) and line a baking sheet with parchment. For frying, heat oil to 350°F (175°C).

  1. Make the filling: In a large bowl, combine shredded chicken, buffalo sauce, cream cheese, shredded cheese, garlic powder, and green onions. Mix until creamy and well-coated.
  2. Assemble the taquitos: Warm tortillas to make pliable. Place 2–3 tablespoons of filling on each tortilla and roll tightly. Place seam-side down on the baking sheet or set aside for frying.
  3. Cook the taquitos: To bake, lightly spray with cooking spray and bake 15–18 minutes until golden. To fry, cook seam-side down for 2–3 minutes per side until golden brown. Drain on paper towels.
  4. Serve: Enjoy hot with ranch, blue cheese dressing, or veggie sticks.

Notes

  • Warm tortillas before rolling to prevent tearing.
  • For spicier taquitos, add jalapeños or extra buffalo sauce.
  • Air fryer method: Cook at 400°F (200°C) for 8–10 minutes, flipping halfway.
  • Great make-ahead option—freeze uncooked taquitos and bake or air fry from frozen.
  • Try a vegetarian version with buffalo cauliflower or chickpeas.
