Buffalo Chicken Taquitos are crispy, spicy, and creamy rolled tortillas filled with shredded chicken, buffalo sauce, and melted cheese. Baked or fried to perfection, they’re a crowd-pleasing appetizer for parties, game days, or easy dinners.

Ingredients

  • 2 cups shredded cooked chicken (rotisserie or homemade)
  • 1/3 cup buffalo sauce (adjust to taste)
  • 4 oz cream cheese (softened)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • 12 small flour or corn tortillas
  • Cooking spray or oil (for brushing or frying)
  • Ranch or blue cheese dressing (for dipping)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine shredded chicken, buffalo sauce, cream cheese, shredded cheddar, garlic powder, onion powder, salt, and pepper. Mix until creamy and well blended.
  3. Warm tortillas in the microwave for 10–15 seconds to make them pliable.
  4. Spoon 2–3 tablespoons of the buffalo chicken mixture onto one edge of each tortilla, then roll tightly into a log.
  5. Place the taquitos seam-side down on the prepared baking sheet.
  6. Lightly brush or spray the tops with oil or cooking spray.
  7. Bake for 15–18 minutes, or until golden and crispy. (Alternatively, air fry at 375°F for 8–10 minutes or deep fry for 2–3 minutes per side.)
  8. Serve hot with ranch or blue cheese dressing for dipping.

Notes

  • Use rotisserie chicken for a quick and flavorful shortcut.
  • Adjust buffalo sauce for desired spice level.
  • Seal taquitos seam-side down to prevent unrolling while baking.
  • To make ahead, assemble and refrigerate up to 24 hours before baking.
  • Freeze before baking and cook straight from frozen, adding 5 minutes to bake time.
