Ingredients

  • 2 flatbreads or naan breads
  • 2 teaspoons light olive oil or avocado oil
  • ½ cup buffalo wing sauce
  • 1½ cups cooked chicken, diced
  • 1 cup shredded mozzarella cheese
  • ⅓ cup blue cheese dressing
  • ⅓ cup green onions, thinly sliced

Instructions

  • Preheat the Oven: Set oven to 425°F (218°C). Line a baking sheet with parchment paper and place the flatbreads on it.
  • Prepare the Crust: Lightly brush the edges of the flatbreads with olive oil. Bake for 5 minutes to warm and slightly crisp the crust.
  • Assemble the Flatbreads: Remove from oven. Spread buffalo sauce evenly over each flatbread, then top with diced chicken and mozzarella cheese. Drizzle with blue cheese dressing.
  • Bake: Return to the oven and bake for 12-15 minutes, until cheese is melted and bubbly. For a golden top, broil on high for 1-2 minutes, watching closely.
  • Garnish and Serve: Sprinkle with sliced green onions. Add extra buffalo sauce or blue cheese dressing if desired. Slice and serve immediately.

Notes

  • Cheese Variations: Use cheddar, Monterey Jack, or add blue cheese crumbles for extra tang.
  • Crust Options: Try naan, pre-made pizza crust, or homemade dough. Adjust baking times accordingly.
  • Vegetarian Version: Substitute chicken with seitan, tofu, or roasted cauliflower.
  • Prevent Sogginess: Pre-bake the flatbread before adding toppings to maintain a crisp texture
