Buckeye peanut butter balls are no-bake treats featuring a creamy peanut butter center partially dipped in chocolate, resembling the nut of an Ohio buckeye tree. They’re rich, easy to make, and perfect for holidays or gifting.

Ingredients

  • 1 1/2 cups creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 1/4 tsp salt (optional)
  • 3 1/2 to 4 cups powdered sugar
  • 2 cups semi-sweet or dark chocolate chips
  • 1 tbsp coconut oil or shortening

Instructions

  1. In a large bowl, beat peanut butter, softened butter, vanilla, and salt until smooth.
  2. Gradually add powdered sugar and mix until a thick, moldable dough forms.
  3. Roll into 1-inch balls and place on a parchment-lined baking sheet.
  4. Chill in the refrigerator for 1 hour or freeze for 30 minutes until firm.
  5. Melt chocolate chips with coconut oil in the microwave or double boiler until smooth.
  6. Using a toothpick, dip each peanut butter ball ¾ of the way into the chocolate, leaving the top exposed.
  7. Let excess chocolate drip off and place back on the baking sheet.
  8. Chill until chocolate is set, about 15–20 minutes.
  9. Remove toothpicks and gently smooth over holes if desired. Serve or store as directed.

Notes

  • Use processed peanut butter for best structure—natural versions can be too oily.
  • Adjust powdered sugar to achieve a dough that holds shape but isn’t dry.
  • Add coconut oil to melted chocolate for a smoother coating.
  • Can be fully dipped for a truffle-style treat.
  • Great for make-ahead and freezer-friendly desserts.
