Bubble and Squeak is a traditional British comfort dish made from mashed potatoes and cabbage pan-fried until golden and crispy. This simple and budget-friendly recipe transforms leftovers into a hearty, flavorful meal with a crisp exterior and soft interior.

Ingredients

  • 3 cups mashed potatoes
  • 2 cups cooked cabbage, finely chopped
  • 2 tablespoons butter or vegetable oil
  • 1/2 onion, finely chopped
  • Salt and black pepper to taste

Instructions

  1. If not already prepared, cook and mash the potatoes and cook the cabbage until tender. Allow to cool slightly.
  2. In a large bowl, combine mashed potatoes and chopped cabbage. Season with salt and black pepper.
  3. Heat butter or oil in a large skillet over medium heat.
  4. Add chopped onion and cook until softened and lightly golden.
  5. Add the potato and cabbage mixture to the skillet, pressing firmly into an even layer about 1 to 2 inches thick.
  6. Cook undisturbed for 8 to 10 minutes until the bottom is crisp and golden.
  7. Flip in sections or carefully turn the mixture over and cook for another 8 to 10 minutes until both sides are crispy and heated through.
  8. Serve hot, sliced or spooned onto plates.

Notes

  • Press mixture firmly and avoid stirring to achieve a crispy crust.
  • Leftover roast potatoes can be chopped and used instead of mashed.
  • Add cooked bacon, ham, or cheese for extra flavor.
  • Fresh herbs like parsley or thyme enhance the taste.
  • Best reheated in a skillet to restore crispness.
