Brown bread is a hearty, wholesome loaf made with whole wheat flour and molasses, delivering a rich, nutty flavor and tender crumb. Perfect for toast, sandwiches, or enjoying warm with butter, it’s nutritious, satisfying, and simple to make at home.

Ingredients

  • 2 cups whole wheat flour
  • 1½ cups all-purpose flour
  • 2¼ tsp active dry yeast
  • 1¼ cups warm water
  • ¼ cup molasses
  • 1 tbsp brown sugar (optional)
  • 1½ tsp salt
  • 2 tbsp unsalted butter or oil
  • ¼ cup rolled oats (optional, for topping or dough)
  • Optional: 2 tbsp flax, sunflower, or sesame seeds

Instructions

  1. In a small bowl, combine warm water, yeast, and a pinch of sugar or molasses. Let sit for 5–10 minutes until foamy.
  2. In a large bowl, whisk together whole wheat flour, all-purpose flour, salt, and optional seeds or oats.
  3. Stir in molasses, brown sugar (if using), butter or oil, and the activated yeast mixture.
  4. Mix until a dough forms, then knead for 8–10 minutes by hand or with a stand mixer until smooth and elastic.
  5. Place dough in a greased bowl, cover, and let rise in a warm place for 1 to 1.5 hours, or until doubled in size.
  6. Punch down dough and shape into a loaf. Place into a greased 9×5-inch loaf pan.
  7. Cover and let rise again for 30–45 minutes, until puffy.
  8. Preheat oven to 375°F (190°C). Brush top with water or milk and sprinkle with oats or seeds, if desired.
  9. Bake for 35–40 minutes, until golden brown and sounds hollow when tapped.
  10. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
