  • 3 large chicken breasts
  • Salt and pepper, to taste
  • 1 ½ tsp garlic powder, divided
  • ¼ tsp paprika
  • 1 cup broccoli florets, finely chopped
  • ½ cup red bell pepper, finely diced
  • 1 cup mild cheddar cheese
  • 1 tbsp mayonnaise
  • 2 tbsp olive oil

Instructions

  • Preheat Oven: Preheat the oven to 425°F (220°C).
  • Season Chicken: Season both sides of the chicken breasts with salt, pepper, paprika, and ½ tsp garlic powder. Slice a pocket into each breast without cutting all the way through.
  • Prepare Broccoli: In a microwave-safe dish, add broccoli florets with 2 tablespoons of water. Cover and microwave for 1 minute. Drain excess water.
  • Make Filling: In a bowl, mix the broccoli, red bell pepper, cheddar cheese, mayonnaise, remaining garlic powder, and a pinch of salt and pepper. Stir to combine.
  • Stuff Chicken: Fill each chicken breast with the mixture. Secure with toothpicks if needed.
  • Sear Chicken: Heat olive oil in an oven-safe skillet over medium heat. Sear chicken for 3-4 minutes per side until golden brown.
  • Bake: Cover the skillet with foil and transfer it to the oven. Bake for 15-17 minutes, or until the internal temperature reaches 165°F (75°C).
  • Rest & Serve: Remove from the oven, cover, and let rest for 5 minutes before serving
