Ingredients

  • Butter

  • Onion, chopped

  • Carrots, shredded
  • Broccoli florets, chopped

  • Milk
  • Heavy cream
  • Cheddar cheese, shredded

Instructions

  1. In a large pot, melt the butter with olive oil over medium heat.
  2. Add the chopped onion and cook for about 4–5 minutes until softened.
  3. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  4. Add the shredded carrots and chopped broccoli and cook for about 3–4 minutes.
  5. Sprinkle the flour over the vegetables and stir well to create a roux.
  6. Slowly pour in the chicken broth while stirring continuously to prevent lumps.
  7. Add the milk and bring the soup to a gentle simmer.
  8. Cook for about 10–12 minutes until the broccoli becomes tender.
  9. Stir in the heavy cream and shredded cheddar cheese.
  10. Continue stirring until the cheese melts completely and the soup becomes smooth and creamy.
  11. Season with salt, black pepper, and paprika if desired.
  12. Serve hot with bread or crackers.
