Broccoli Cheddar Stuffed Chicken is a juicy, flavorful dish featuring tender chicken breasts filled with a creamy blend of broccoli, cheddar, and cream cheese. It’s a comforting, protein-rich meal that’s easy to make and perfect for both weeknight dinners and special occasions.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh broccoli florets, finely chopped
  • 3/4 cup shredded cheddar cheese
  • 2 oz cream cheese, softened
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp olive oil or butter
  • Toothpicks (for securing the chicken)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish or line it with parchment paper.
  2. In a small bowl, mix chopped broccoli, cheddar cheese, and cream cheese until well combined.
  3. Butterfly each chicken breast by slicing it horizontally to create a pocket, being careful not to cut all the way through.
  4. Season both sides of the chicken with salt, pepper, garlic powder, and paprika.
  5. Spoon the broccoli-cheddar mixture evenly into each chicken breast and secure the edges with toothpicks if needed.
  6. Heat olive oil or butter in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2–3 minutes per side until golden brown.
  7. Transfer the skillet to the oven and bake for 20–25 minutes, or until the chicken is fully cooked and the filling is melted and bubbly.
  8. Remove toothpicks, rest for 5 minutes, and serve warm.

  • Thaw and drain frozen broccoli well before using.
  • Do not overfill to prevent the cheese mixture from leaking.
