Brioche French toast casserole is a rich, custardy breakfast bake made with buttery brioche bread soaked in a cinnamon-vanilla egg mixture and baked until golden and puffed. It’s perfect for holiday mornings, brunches, or cozy weekend breakfasts.

Ingredients

  • 1 loaf brioche bread, cut into 1-inch cubes (day-old preferred)
  • 6 large eggs
  • 1 1/2 cups whole milk or half-and-half
  • 1/2 cup heavy cream (optional)
  • 1/4 cup granulated sugar
  • 2 tablespoons brown sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 teaspoon salt
  • Butter (for greasing baking dish)
  • Powdered sugar (optional, for serving)
  • Maple syrup or whipped cream (optional, for serving)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter.
  2. Spread brioche cubes evenly in the baking dish.
  3. In a large bowl, whisk together eggs, milk, cream (if using), sugars, vanilla, cinnamon, nutmeg, and salt.
  4. Pour the custard mixture over the brioche. Gently press the bread down to help it soak in.
  5. Let sit for 20–30 minutes or cover and refrigerate overnight.
  6. Bake uncovered for 40–45 minutes, or until golden on top and set in the center.
  7. Cool slightly before serving. Top with powdered sugar, syrup, or whipped cream as desired.
