The Brie Grilled Cheese Sandwich is an indulgent, gourmet version of a classic, featuring creamy Brie cheese melted between buttery, toasted slices of rustic bread. Optional sweet or savory add-ins like fig jam, caramelized onions, or sliced apples elevate this quick and satisfying sandwich into a restaurant-worthy meal.

Ingredients

  1. 4 slices rustic bread (sourdough, French, or multigrain)
  2. 46 oz Brie cheese (rind on or removed, sliced)
  3. 2 tablespoons unsalted butter, softened
  4. Optional: fig jam, thinly sliced apples or pears, caramelized onions, prosciutto, arugula, fresh herbs

Instructions

Preheat a skillet or griddle over medium heat.

  1. Butter one side of each bread slice.
  2. Place Brie slices on the unbuttered side of two slices of bread.
  3. Add any optional toppings such as jam, fruit slices, onions, or prosciutto.
  4. Top with the remaining slices of bread, buttered side out.
  5. Grill sandwiches for 3–4 minutes per side, pressing gently, until golden brown and cheese is melted.
  6. Let rest for 1 minute before slicing and serving warm.

Notes

  • Use thicker bread slices to help hold in the melted Brie.
  • Triple-cream Brie creates an even creamier melt.
  • Sweet toppings like jam or fruit pair beautifully with the rich cheese.
  • To reheat leftovers, use a skillet over low heat to restore crispness.
