Breakfast tostadas are a crispy, flavorful, and protein-packed way to start your day. Made with crunchy corn tortillas, creamy refried beans, eggs, and fresh toppings, this easy recipe is perfect for busy mornings or a delicious brunch. Customize them with avocado, salsa, or cheese for the ultimate breakfast experience!

Ingredients

  • 4 corn tortillas
  • 4 eggs
  • 1 cup refried beans
  • 1 tbsp olive oil or butter
  • ½ cup cheese (cheddar, cotija, or queso fresco)
  • 1 avocado, sliced
  • ½ cup salsa (red or green)
  • Fresh cilantro, chopped
  • 1 lime, cut into wedges
  • Salt and pepper, to taste

Instructions

  • Crisp the Tortillas – Heat a skillet over medium-high heat and add oil. Fry the tortillas until crispy (1-2 minutes per side) or bake at 375°F (190°C) for 8-10 minutes.
  • Prepare the Beans – Warm the refried beans in a small saucepan over low heat, stirring occasionally.
  • Cook the Eggs – In a skillet, cook eggs to your preference (fried, scrambled, or poached). Season with salt and pepper.
  • Assemble the Tostadas – Spread refried beans on each tortilla. Top with an egg, cheese, avocado slices, and salsa.
  • Garnish and Serve – Sprinkle with fresh cilantro and serve with lime wedges.

Notes

  • For extra spice, add jalapeño slices or hot sauce.
