Breakfast Fried Rice is a savory and satisfying morning twist on a classic dish. Made with eggs, crispy bacon or sausage, and colorful vegetables, it’s a hearty and flavorful way to start your day while making good use of leftover rice.

Ingredients

  • 3 cups cooked and cooled rice (preferably day-old)
  • 3 large eggs, beaten
  • 4 slices bacon or 1/2 pound breakfast sausage, cooked and crumbled
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1/2 cup frozen peas and carrots (optional)
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon sesame oil or olive oil
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Optional toppings: sriracha, avocado slices, sesame seeds

Instructions

  1. Heat a large skillet or wok over medium heat and add sesame oil or olive oil.
  2. Add diced onions and bell peppers, cooking for 3–4 minutes until softened.
  3. Stir in cooked bacon or sausage and let it crisp slightly.
  4. Push ingredients to one side of the pan and pour in the beaten eggs. Scramble until cooked, then mix with the rest.
  5. Add the cooked rice and peas and carrots (if using). Stir to combine.
  6. Drizzle soy sauce over the mixture and stir-fry for 2–3 minutes until heated through.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped green onions and serve with optional toppings like sriracha or avocado.

Notes

  • Use day-old rice for the best texture—fresh rice can become mushy.
  • Customize with your favorite vegetables or proteins.
  • For a lighter version, use turkey bacon and olive oil instead of sesame oil.
  • Reheat leftovers in a skillet for the best texture.
