Brazilian Cheese Bread Bites, or Pão de Queijo, are chewy, cheesy rolls made from tapioca flour and cheese. Naturally gluten-free, they have a crisp outside with a soft, stretchy interior and are perfect as snacks, appetizers, or sides.

Ingredients

  1. 2 cups tapioca flour (tapioca starch)
  2. 1 cup milk
  3. 1/4 cup butter or oil
  4. 1/2 teaspoon salt
  5. 1 large egg
  6. 1 cup grated cheese (Parmesan, mozzarella, or a mix)

Instructions

Preheat oven to 375°F (190°C). Grease or line a mini muffin tin.

  1. In a saucepan, heat the milk, butter, and salt until it just begins to boil.
  2. Remove from heat and stir in the tapioca flour until a sticky dough forms.
  3. Let the dough cool slightly, then add the egg and mix well.
  4. Fold in grated cheese until fully combined.
  5. Spoon dough into muffin tin cavities, filling each about ¾ full.
  6. Bake for 15–20 minutes, until puffed and lightly golden.
  7. Serve warm for best texture and flavor.

Notes

  • Best served fresh from the oven, but can be reheated.
  • Use a blend of Parmesan and mozzarella for flavor and stretch.
  • If dough is too sticky, lightly oil your hands to shape.
  • Freeze dough balls to bake later for convenience.
  • Experiment with herbs, spices, or different cheeses for variety.
