Bounty Dates are no-bake, homemade treats inspired by the Bounty bar, combining chewy Medjool dates, creamy coconut, and rich dark chocolate for a wholesome, indulgent snack.

Ingredients

  1. 1 cup pitted Medjool dates
    1 cup shredded unsweetened coconut (plus extra for rolling)
    1/4 cup coconut cream or coconut milk
    1 teaspoon vanilla extract
    6 ounces dark chocolate, melted

Instructions

In a food processor, blend dates, shredded coconut, coconut cream, and vanilla extract until sticky and well combined.

  1. Scoop tablespoon-sized portions and roll into balls. Coat each ball by rolling in extra shredded coconut.
  2. Place balls on a lined tray and refrigerate for 30 minutes to firm up.
  3. Dip each ball into melted dark chocolate using a fork, letting excess drip off. Place back on the tray.
  4. Refrigerate again until chocolate is firm, about 15-20 minutes.
  5. Enjoy immediately or store in an airtight container in the fridge.

Notes

  1. Add chopped almonds or pistachios inside the mixture for added crunch.
  2. Sprinkle cinnamon or cardamom for extra flavor.
  3. Use milk or white chocolate instead of dark chocolate for coating if preferred.
  4. Store in an airtight container in the refrigerator for up to 1 week.
  5. Freeze for longer storage and thaw before serving.
  6. Serve chilled; no reheating needed.
  7. Add more shredded coconut if mixture is too sticky.
  8. Use thick coconut cream or the solid part of canned coconut milk for best results.
  9. Add a scoop of protein powder to boost nutrition.
  10. Enjoy plain or rolled in coconut without chocolate coating for a lighter version.
