Instructions

  3. Make the Dressing: In a small bowl, whisk together lime juice, sugar, fish sauce, and water until the sugar is dissolved. Adjust to taste—add more sugar for sweetness, fish sauce for saltiness, or lime juice for tang.
  4. Grill the Beef: Heat the vegetable oil in a grill pan or skillet over medium-high heat. Grill the marinated beef slices for 2-3 minutes on each side or until cooked to your desired level of doneness. Remove from heat and set aside.
  5. Assemble the Dish: In bowls, layer the cooked vermicelli noodles at the bottom. Add shredded lettuce, julienned cucumber, carrots, and fresh herbs like cilantro and mint. Top with grilled beef slices.
  6. Finish the Dish: Drizzle the dressing over the top of the dish. Sprinkle with crushed peanuts, fried shallots, and fresh chili slices if desired.
