Ingredients

1 cup rolled oats
1/2 cup protein powder (vanilla or unflavored)
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup unsweetened applesauce
1/4 cup honey or maple syrup
1 large egg or flax egg (for vegan option)
1 teaspoon vanilla extract
3/4 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the rolled oats, protein powder, baking powder, and salt.
  3. In a separate bowl, combine applesauce, honey or maple syrup, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Gently fold in the blueberries, being careful not to crush them.
  6. Scoop spoonfuls of the dough onto the baking sheet, flattening them slightly.
  7. Bake for 12-15 minutes or until the edges are golden brown.
