Blueberry French Toast Casserole is a sweet, make-ahead breakfast bake featuring soft bread, juicy blueberries, and a creamy egg custard—perfect for brunches, holidays, or crowd-pleasing breakfasts.

Ingredients

  • 1 loaf French bread, brioche, or challah, cut into cubes
  • 2 cups fresh or frozen blueberries
  • 6 large eggs
  • 1 1/2 cups whole milk or half-and-half
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Butter, for greasing the baking dish
  • Optional toppings: powdered sugar, maple syrup, whipped cream, or blueberry sauce

Instructions

  1. Grease a 9×13-inch casserole dish with butter.
  2. Spread half of the cubed bread evenly into the dish, then sprinkle with half the blueberries. Repeat with remaining bread and blueberries.
  3. In a large bowl, whisk together the eggs, milk, cream, sugar, vanilla, cinnamon, and salt until well combined.
  4. Pour the custard mixture evenly over the bread and berries, pressing down lightly to ensure the bread soaks it up.
  5. Cover and refrigerate for at least 2 hours or overnight.
  6. Preheat oven to 350°F (175°C). Uncover and bake for 45–55 minutes, or until the top is golden and the center is set.
  7. Let rest for 5–10 minutes before slicing. Serve with optional toppings like powdered sugar or maple syrup.

  • Use day-old or slightly stale bread for best texture.
  • Frozen blueberries can be used without thawing to prevent excess moisture.
