Black Truffle Aioli is a rich and creamy sauce infused with the deep, earthy aroma of black truffle. Smooth and velvety with a subtle garlicky kick, it elevates everything from fries to grilled meats and roasted vegetables.

Ingredients

  • 1 cup (240 g) mayonnaise
  • 1 tablespoon fresh black truffle, finely grated or minced
  • 1 teaspoon truffle oil (optional)
  • 1 small garlic clove, finely minced or grated
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. In a medium bowl, add the mayonnaise.
  2. Stir in the finely grated or minced black truffle.
  3. Add the minced garlic and fresh lemon juice.
  4. If using, drizzle in the truffle oil to enhance the aroma.
  5. Season with salt and freshly ground black pepper.
  6. Mix thoroughly until smooth and well combined.
  7. Cover and refrigerate for at least 30 minutes to allow the flavors to meld before serving.

Notes

  • For roasted garlic flavor, substitute raw garlic with roasted garlic.
  • Add a pinch of cayenne pepper or chili paste for gentle heat.
  • Use plant-based mayonnaise for a dairy-free and egg-free version.
  • Store in an airtight container in the refrigerator for up to 4 days.
  • Freezing is not recommended as the texture may separate.
