Ingredients

  1. 1 cup cooked or canned black beans (rinsed and drained if canned)
  2. 1 ripe mango, peeled and diced
  3. 1/2 red bell pepper, diced
  4. 1/4 cup red onion, finely diced
  5. 1/4 cup fresh cilantro, chopped
  6. 1 tablespoon lime juice (freshly squeezed)
  7. 1 tablespoon olive oil
  8. 1/2 teaspoon ground cumin
  9. 1/4 teaspoon chili powder (optional, for heat)
  10. Salt and pepper to taste

Instructions

Prepare the Ingredients: Peel and dice the mango into small cubes. Dice the red bell pepper and red onion. Chop the cilantro finely.
