This Black Bean Mango Salsa combines the sweetness of ripe mango with earthy black beans, zesty lime, and crunchy vegetables, making it a refreshing and flavorful addition to any dish.

Ingredients

  1. 1 can (15 oz) black beans, drained and rinsed
    1 ripe mango, peeled and diced
    1/2 red bell pepper, diced
    1/4 cup red onion, finely diced
    1/4 cup fresh cilantro, chopped
    12 tbsp lime juice
    1/2 tsp cumin
    1/4 tsp salt
    1/4 tsp black pepper
    1 small jalapeño, finely diced (optional)

Instructions

In a large bowl, combine the black beans, mango, red bell pepper, red onion, and cilantro.

  1. In a separate small bowl, whisk together the lime juice, cumin, salt, and black pepper.
  2. Pour the dressing over the bean mixture and toss gently to combine.
