Black Bean Dorito Taco Salad is a bold, crunchy Tex-Mex-inspired dish combining seasoned black beans, fresh vegetables, cheese, and crushed Doritos for a flavorful and satisfying meal perfect for lunch, dinner, or parties.

Ingredients

  • 2 cups crushed Doritos (regular or flavored)
  • 1 can (15 oz) black beans, rinsed and drained
  • 4 cups chopped Romaine lettuce or mixed greens
  • 1 cup cherry tomatoes, halved or 1 large tomato, diced
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup corn kernels (fresh or canned)
  • 1/4 cup sliced red onion or green onion
  • 1/4 cup sliced black olives (optional)
  • 1 avocado, diced
  • 1 tbsp taco seasoning
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • Optional toppings: sour cream, salsa, cilantro, jalapeños

Instructions

  1. In a skillet over medium heat, combine black beans with taco seasoning and a splash of water. Heat for 5–7 minutes until warm and seasoned. Set aside.
  2. In a large bowl, mix lettuce, tomatoes, corn, onion, olives, and cheese.
  3. Add the seasoned black beans and toss gently.
  4. Crush Doritos lightly and add them to the salad just before serving.
  5. In a small bowl, whisk together olive oil, lime juice, salt, and pepper. Drizzle over the salad and toss to combine.
  6. Top with diced avocado and any desired toppings like sour cream, salsa, cilantro, or jalapeños.
  7. Serve immediately for best texture and flavor.
