This Taco Casserole is a deliciously layered dish packed with bold taco flavors, making it the perfect weeknight dinner or potluck favorite. Featuring seasoned beef, salsa, chili beans, crunchy tortilla chips, and gooey melted cheese, this easy-to-make casserole is a comforting and satisfying meal.

Ingredients

For the Casserole:

  • 1 pound lean ground beef
  • 2 cups salsa (mild, medium, or hot)
  • 1 (16-ounce) can chili beans, drained
  • 3 cups tortilla chips, crushed
  • 2 cups sour cream
  • 1 (2-ounce) can sliced black olives, drained
  • ½ cup chopped green onion
  • ½ cup chopped fresh tomato
  • 2 cups shredded Cheddar cheese

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  • Cook the Beef: In a large skillet over medium-high heat, cook the ground beef until browned and crumbly (about 8-10 minutes). Drain any excess fat.
  • Prepare the Sauce: Stir in the salsa and simmer over medium heat for about 20 minutes, until most of the liquid is absorbed. Add the drained chili beans and cook until heated through.
  • Assemble the Casserole:
    • Spread the crushed tortilla chips evenly in the baking dish.
    • Layer the beef and bean mixture over the chips.
    • Spread the sour cream evenly over the beef layer.
    • Sprinkle black olives, green onions, and tomatoes over the sour cream.
    • Top with shredded Cheddar cheese.
  • Bake: Place in the preheated oven and bake for 30 minutes, or until the cheese is melted and bubbly.
  • Serve: Let cool slightly before serving. Garnish with extra green onions, avocado, or guacamole if desired.

Notes

  • Use corn chips or tortilla strips for added crunch.
  • For a spicier kick, add diced jalapeños or use hot salsa.
  • To prevent sogginess, serve immediately after baking.
  • Add cooked rice for a heartier meal.
