Berry Protein Pancake Bites are bite-sized, fluffy pancakes packed with protein and bursting with fresh berry flavor. These easy-to-make morsels are perfect for a nutritious breakfast, snack, or on-the-go treat.

Ingredients

1 cup rolled oats
1/2 cup protein powder (vanilla or unflavored)
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk (dairy or plant-based)
2 large eggs
1 teaspoon vanilla extract
1/2 cup mixed fresh or frozen berries (blueberries, raspberries, strawberries)
Cooking spray or oil for greasing

Instructions

  1. In a blender or food processor, pulse rolled oats until they become a fine flour.
  2. In a mixing bowl, combine oat flour, protein powder, baking powder, and salt.
  3. In another bowl, whisk together milk, eggs, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Gently fold in the berries, being careful not to overmix.
  6. Preheat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or oil.
  7. Drop small spoonfuls (about 1 tablespoon each) of batter onto the skillet.
  8. Cook for 2-3 minutes or until bubbles form on the surface and edges look set, then flip and cook for another 1-2 minutes until golden and cooked through.
  9. Remove from heat and let cool slightly before serving.
