Ingredients

  • 3 tablespoons chia seeds
  • 1 cup milk (almond, coconut, oat, dairy, etc.)
  • 1 tablespoon maple syrup or honey (optional)
  • 1/2 teaspoon vanilla extract (optional)
  • 1/2 to 1 cup fresh or frozen mixed berries (strawberries, blueberries, raspberries, blackberries)

Instructions

  1. In a bowl or jar, combine chia seeds, milk, sweetener (if using), and vanilla extract.
  2. Stir well to prevent clumping and let sit for 5 minutes.
  3. Stir again to break up any clumps and ensure even distribution.
  4. Cover and refrigerate for at least 2 hours or overnight until thickened.
  5. Before serving, stir the pudding and top with fresh or thawed berries.
  6. Optional: blend some or all of the berries into the pudding for a fruity swirl.

  • Use the standard ratio: 3 tablespoons chia seeds to 1 cup milk for ideal texture.
  • Let it sit overnight for maximum creaminess and convenience.
  • Top with granola, coconut flakes, or nut butter for added flavor and crunch.
  • Blending the mixture creates a smooth, mousse-like pudding.
  • Not recommended for freezing due to texture changes.
