Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 large eggs, separated
  • 1 3/4 cups whole milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  3. In another bowl, whisk the egg yolks, milk, melted butter, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. In a clean bowl, beat the egg whites until stiff peaks form. Gently fold them into the batter.
  6. Pour the batter into the preheated waffle iron, covering the grid without overflowing.
  7. Close the lid and cook until golden brown and crisp, about 3–5 minutes per waffle depending on your iron.
  8. Serve immediately with your favorite toppings.
