Beet Salad on a Stick is a creative and visually striking twist on traditional beet salad. Roasted beets, mixed greens, tangy cheese, and toasted nuts are skewered for an easy-to-eat, fun, and vibrant appetizer.

Ingredients

  1. 3 medium-sized beets, peeled and cut into 1-inch cubes
    1 tablespoon olive oil
    Salt and freshly ground black pepper, to taste
    1 cup mixed greens (arugula, spinach, or baby kale)
    1/2 cup crumbled goat cheese or feta (optional for a vegan version)
    1/4 cup toasted nuts (walnuts, pecans, or almonds), roughly chopped
    1/4 cup balsamic glaze or dressing (store-bought or homemade)
    Wooden skewers or cocktail sticks
    For the dressing (optional):
    2 tablespoons balsamic vinegar
    1 teaspoon Dijon mustard
    1 teaspoon maple syrup (or honey for non-vegan)
    1/4 cup olive oil
    Salt and pepper to taste

Instructions

Preheat your oven to 400°F (200°C). Wrap each beet in foil and place them on a baking sheet. Roast for 40-50 minutes, or until tender when pierced with a fork. Allow the beets to cool before peeling and cutting them into 1-inch cubes.

  1. For the dressing (optional), whisk together the balsamic vinegar, Dijon mustard, maple syrup, olive oil, salt, and pepper in a small bowl. Set aside.
  2. Once the beets are roasted and cut, begin threading the beet cubes, mixed greens, crumbled goat cheese (or feta), and toasted nuts onto the wooden skewers. Layer the ingredients to balance the beets, greens, cheese, and nuts.
  3. Place the assembled skewers on a platter and drizzle them with balsamic glaze or your homemade dressing. Optionally, serve extra dressing on the side for dipping.
  4. Serve immediately as a fresh appetizer or salad.

  • For a vegan option, skip the cheese or use a plant-based cheese like cashew cheese or vegan feta.
