Beet Lemonade is a bold and beautiful non-alcoholic drink that blends the earthy sweetness of beets with the tart brightness of fresh lemon juice. Refreshing, nourishing, and vibrant, it’s a unique twist on classic lemonade perfect for health-conscious sipping.

Ingredients

  • 1 small fresh beet, peeled and chopped (or 1/2 cup beet juice)
  • 1/2 cup fresh lemon juice (about 34 lemons)
  • 3 cups cold water
  • 12 tablespoons honey, agave, or maple syrup (to taste)
  • Ice cubes
  • Optional garnish: lemon slices, mint leaves

Instructions

  1. If using fresh beet, blend it with 1/2 cup of water until smooth, then strain through a fine mesh sieve to extract the juice.
  2. In a pitcher, combine the beet juice, lemon juice, sweetener, and remaining water.
  3. Stir well until the sweetener is fully dissolved.
  4. Taste and adjust lemon or sweetener to your preference.
  5. Chill in the refrigerator or serve immediately over ice.
  6. Garnish with lemon slices or mint leaves, if desired.

Notes

  • Use bottled beet juice for convenience, but choose an unsweetened variety.
  • Roasted beets can also be used for a deeper flavor.
  • Adjust beet quantity for a milder or stronger earthy flavor.
  • Store leftover lemonade in the fridge and stir before serving.
