Beef Tips & Gravy is a hearty comfort food featuring tender chunks of beef simmered in a rich, savory gravy. Perfectly served over mashed potatoes, rice, or noodles, it’s a cozy and satisfying meal for any occasion.

Ingredients

  • 2 lbs beef sirloin, stew meat, or chuck roast, cut into bite-sized pieces
  • 2 tbsp olive oil or vegetable oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce (optional)
  • 2 tbsp all-purpose flour or cornstarch
  • 1/4 cup water
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Season the beef with salt and pepper.
  2. In a large skillet or Dutch oven, heat olive oil over medium-high heat. Sear beef pieces on all sides until browned. Remove and set aside.
  3. In the same pan, add diced onion and cook until softened, about 3–4 minutes. Add minced garlic and cook for 1 more minute.
  4. Return the beef to the pan. Stir in Worcestershire sauce, soy sauce (if using), and beef broth. Bring to a simmer.
  5. Reduce heat to low, cover, and let simmer for 1½ to 2 hours, stirring occasionally, until beef is tender. Add extra broth if needed.
  6. In a small bowl, whisk together flour (or cornstarch) and water to form a slurry. Stir into the beef mixture and cook for 5–10 minutes, until gravy thickens.
  7. Taste and adjust seasoning with salt and pepper.
  8. Serve hot over mashed potatoes, rice, or egg noodles. Garnish with fresh parsley if desired.

  • Use chuck roast or sirloin for the most tender results.
  • For a gluten-free version, use cornstarch instead of flour.
  • Add mushrooms or herbs like rosemary for extra depth of flavor.
  • Great for make-ahead meals — reheats and freezes well.
