Ingredients

  1. 1 lb ground beef (or your preferred cut of beef, thinly sliced)
    1 ripe avocado, sliced
    1 cup cooked rice (white, brown, or cauliflower rice)
    1 cup cherry tomatoes, halved
    1 small red onion, thinly sliced
    1 cup corn kernels (fresh, frozen, or canned)
    1 lime, juiced
    1 tablespoon olive oil
    1 teaspoon garlic powder
    1 teaspoon cumin
    Salt and pepper, to taste
    Fresh cilantro, chopped (optional)

Instructions

Heat olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spoon until browned and fully cooked. Season with garlic powder, cumin, salt, and pepper to taste. Once cooked, remove from heat and set aside.

  1. While the beef is cooking, prepare the rice according to package instructions. For a low-carb option, use cauliflower rice.
  2. In each bowl, layer the cooked rice at the bottom. Top with cooked beef, avocado slices, cherry tomatoes, red onion, and corn.
