BBQ Hawaiian Chicken Salad with Pineapple is a fresh and flavorful tropical-inspired dish featuring smoky BBQ chicken, sweet pineapple, and crisp vegetables topped with a zesty homemade dressing. Perfect for summer meals, meal prep, or a colorful lunch or dinner.

Ingredients

  • 2 boneless, skinless chicken breasts or thighs
  • 1/2 cup BBQ sauce
  • 1 cup fresh pineapple, grilled or diced
  • 4 cups mixed greens (romaine, spinach, or spring mix)
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1 red bell pepper, sliced
  • 1/2 cucumber, sliced
  • 1 avocado, sliced or diced
  • 1 tablespoon olive oil (for grilling)
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish (optional)

Optional Dressing:

  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or grill pan over medium-high heat.
  2. Season the chicken with salt and pepper, then brush with BBQ sauce.
  3. Grill chicken for 5–7 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C). Let rest and slice.
  4. Brush pineapple slices with olive oil and grill for 2–3 minutes per side, or dice fresh pineapple if not grilling.
  5. Assemble the salad with greens, tomatoes, red onion, bell pepper, cucumber, and avocado in a large bowl or platter.
  6. Top with sliced BBQ chicken and pineapple.
  7. In a small bowl, whisk lime juice, olive oil, honey, Dijon mustard, salt, and pepper to make the dressing.
  8. Drizzle dressing over the salad and garnish with cilantro or green onions. Serve immediately.

  • Use rotisserie chicken tossed in BBQ sauce for quicker prep.
