BBQ Chicken-Stuffed Sweet Potatoes combine the sweetness of baked sweet potatoes with the smoky, tangy taste of BBQ chicken. This hearty and flavorful dish is a satisfying meal that can be customized with your favorite toppings, perfect for lunch or dinner.

Ingredients

  1. 4 medium sweet potatoes
    2 chicken breasts (or thighs)
    1 cup BBQ sauce (your favorite brand)
    1 tablespoon olive oil
    1 teaspoon paprika
    1/2 teaspoon garlic powder
    1/2 teaspoon onion powder
    Salt and pepper, to taste
    1/2 cup shredded cheddar cheese (optional)
    1/4 cup sour cream or Greek yogurt (optional)
    Fresh cilantro or green onions, chopped (for garnish)

Instructions

Preheat your oven to 400°F (200°C). Pierce each sweet potato several times with a fork and place them on a baking sheet. Bake for 40-45 minutes, or until tender when pierced with a fork. Alternatively, you can microwave the sweet potatoes on high for 8-10 minutes, turning them halfway through, until soft.

  1. While the sweet potatoes are baking, season the chicken breasts with paprika, garlic powder, onion powder, salt, and pepper. Heat olive oil in a skillet over medium heat. Cook the chicken for 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C). Remove from the skillet and let it rest for a few minutes before shredding it with two forks.
  2. Once the chicken is shredded, place it in a bowl and mix it with the BBQ sauce. Make sure the chicken is well-coated.
  3. Once the sweet potatoes are cooked, cut a slit down the center of each one and gently fluff the inside with a fork to create space for the filling. Spoon the BBQ chicken mixture into each sweet potato, packing it in generously.
  4. Top each stuffed sweet potato with shredded cheddar cheese (if using), sour cream or Greek yogurt, and a sprinkle of fresh cilantro or chopped green onions.
