Ingredients

  • Chicken & Marinade:
    • 2 boneless, skinless chicken breasts (or thighs)
    • ½ cup BBQ sauce (store-bought or homemade)
    • 1 tbsp olive oil
    • 1 tsp garlic powder
    • 1 tsp paprika
    • Salt & pepper to taste
  • Salad:
    • 4 cups romaine lettuce (or mixed greens), chopped
    • 1 cup cherry tomatoes, halved
    • 1 cucumber, sliced
    • ½ red onion, thinly sliced
    • ½ cup feta cheese (optional)
    • 1 avocado, sliced (optional)
  • Dressing:
    • Ranch, balsamic vinaigrette, or honey mustard
  • Extras:
    • Wooden or metal skewers

Instructions

  1. Marinate the Chicken:

    • Cut chicken into bite-sized pieces.
    • Toss with BBQ sauce, olive oil, garlic powder, paprika, salt, and pepper.
    • Marinate for at least 30 minutes.
  2. Prepare the Skewers:

    • Thread marinated chicken onto skewers, leaving space between each piece.
  3. Grill the Chicken:

    • Preheat grill to medium-high heat.
    • Cook skewers for 10-12 minutes, turning occasionally, until fully cooked (165°F internal temperature).
  4. Assemble the Salad:

    • In a large bowl, mix romaine lettuce, cherry tomatoes, cucumber, and red onion.
