BBQ Chicken Skewer Salad combines juicy, grilled BBQ chicken with a crisp, colorful mix of fresh vegetables. It’s a perfect balance of smoky and fresh flavors, ideal for summer meals, meal prep, or a light and satisfying dinner.

Ingredients

  • 1 lb boneless, skinless chicken breast or thighs, cut into chunks
  • 1/2 cup BBQ sauce of choice
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 6 cups mixed greens (romaine, spinach, or arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1 avocado, diced
  • 1/2 cup corn kernels (fresh, grilled, or canned)
  • 1/3 cup crumbled feta or shredded cheddar (optional)
  • Ranch or creamy dressing of choice (optional, for serving)
  • Wooden or metal skewers

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Thread chicken pieces onto skewers.
  3. Brush chicken with olive oil, season with salt and pepper, and coat with BBQ sauce.
  4. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
  5. While the chicken cooks, assemble the salad: combine greens, cherry tomatoes, cucumber, red onion, avocado, corn, and cheese in a large bowl.
  6. Once chicken is done, let rest for a couple of minutes, then remove from skewers.
  7. Top the salad with grilled chicken and drizzle with dressing if desired.
  8. Serve immediately while chicken is warm.
