Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup BBQ sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 4 flour tortillas (8-inch)
  • 1/2 cup red onion, thinly sliced (optional)
  • 1/2 cup corn kernels (optional)
  • 1 tablespoon olive oil (for cooking)

Instructions

  • Combine the shredded chicken with BBQ sauce in a bowl and mix well.
  • Heat a large skillet over medium heat and brush with olive oil.
  • Place one tortilla in the skillet, then sprinkle half of the cheddar and mozzarella cheese evenly over it.
  • Spoon the BBQ chicken mixture over the cheese, followed by the optional red onions and corn.
  • Place the second tortilla on top and press down lightly.
  • Cook for 2-3 minutes until the bottom is golden brown and the cheese begins to melt.
  • Flip carefully and cook for another 2-3 minutes until both sides are crispy and the cheese is fully melted.
  • Slice into wedges and serve hot
