Banoffee Pie is a beloved British dessert combining the sweetness of bananas, the richness of toffee, and the lightness of whipped cream, all in a buttery biscuit crust. It’s a no-bake dessert that’s easy to make and perfect for any occasion.

Ingredients

  1. For the crust:
  2. 1 1/2 cups digestive biscuits (or graham crackers), crushed into crumbs
  3. 1/4 cup unsalted butter, melted
  4. 2 tablespoons sugar (optional)
  5. For the toffee filling:
  6. 1 can (14 oz) sweetened condensed milk
  7. 1/4 cup unsalted butter
  8. 1/4 cup dark brown sugar
  9. 1/2 teaspoon vanilla extract
  10. Pinch of salt
  11. For the topping:
  12. 2 ripe bananas, sliced
  13. 1 cup heavy cream
  14. 2 tablespoons powdered sugar
  15. 1 teaspoon vanilla extract
  16. Grated chocolate or cocoa powder (optional, for garnish)

Instructions

Make the crust: Combine crushed digestive biscuits (or graham crackers) with melted butter and sugar (optional). Press into a 9-inch pie dish and refrigerate for at least 30 minutes to set.

  1. Prepare the toffee filling: In a saucepan, combine sweetened condensed milk, butter, dark brown sugar, vanilla extract, and a pinch of salt. Simmer over medium heat for 5-7 minutes, stirring constantly until thickened. Cool for 10-15 minutes.
  2. Assemble the pie: Pour the cooled toffee filling into the prepared crust and refrigerate for at least 1 hour to set.
  3. Prepare the topping: Whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Be careful not to overbeat.
  4. Garnish and serve: Once the toffee layer is set and chilled, arrange sliced bananas over it. Spoon or pipe the whipped cream on top. Garnish with grated chocolate or cocoa powder if desired. Refrigerate for an additional 30 minutes before serving.

Notes

  1. If using bananas, choose slightly under-ripe bananas to avoid browning.
  2. The pie can be made ahead of time; just assemble and refrigerate for the best flavor.
  3. For a richer crust, add crushed nuts like walnuts or pecans to the crust mixture.
