Ingredients
3 ripe bananas, mashed
1 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 cup sugar (white or brown)
1 large egg
1/3 cup milk (dairy or non-dairy)
1/4 cup vegetable oil or melted butter
1 tsp vanilla extract
3/4 cup chocolate chunks or chopped chocolate bars
1/2 tsp ground cinnamon (optional)
1/3 cup chopped nuts (optional)
Instructions
Preheat oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
In a large bowl, mash the bananas until smooth.
Add sugar, egg, milk, oil (or butter), and vanilla extract. Mix until well combined.
Add flour, baking soda, baking powder, salt, and cinnamon if using. Stir until just combined.
Fold in chocolate chunks and nuts if using.
Spoon the batter evenly into muffin cups, filling each about 3/4 full.
Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
Cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
Notes
Use very ripe bananas with brown spots for best flavor and moisture.
Don’t overmix the batter to keep muffins light and fluffy.
