These Banana Bread Cookies are soft, chewy, and packed with the warm flavors of traditional banana bread. Made with ripe bananas, cinnamon, and brown sugar, they’re the perfect way to use overripe bananas. Quick to prepare and ready in under 30 minutes, these cookies make a delicious snack or dessert!

Ingredients

Wet Ingredients:
  • 2 ripe bananas, mashed
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  • Preheat & Prepare: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  • Mix Wet Ingredients: In a bowl, beat butter, brown sugar, and granulated sugar until fluffy. Add mashed bananas, egg, and vanilla extract; mix until smooth.
  • Combine Dry Ingredients: In a separate bowl, whisk flour, baking soda, baking powder, salt, and cinnamon.
  • Form the Dough: Gradually add dry ingredients to wet ingredients. Stir until combined. Fold in nuts, chocolate chips, or shredded coconut if using.
  • Shape & Bake: Scoop tablespoon-sized portions onto the baking sheet, spacing 2 inches apart. Gently press down with a fork. Bake for 10-12 minutes until golden brown.
  • Cool & Enjoy: Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack. Serve warm or store in an airtight container.
