Ingredients

4 boneless, skinless chicken breasts

2 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

1 cup heavy cream

½ cup sun-dried tomatoes, chopped

2 cloves garlic, minced

1 cup spinach, fresh or frozen

½ cup grated Parmesan cheese

½ tsp Italian seasoning

1 tbsp fresh basil (optional)

Instructions

  1. Preheat the Oven:
    Preheat your oven to 375°F (190°C).

  2. Prepare the Chicken:
    Season the chicken breasts with garlic powder, onion powder, salt, and pepper.

  3. Sear the Chicken:
    Heat olive oil in a large oven-safe skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

  4. Prepare the Sauce:
    In the same skillet, add the minced garlic and cook for 30 seconds until fragrant. Add the sun-dried tomatoes and spinach, sautéing for 2-3 minutes until the spinach wilts.

  5. Make the Cream Sauce:
    Pour in the heavy cream and stir to combine. Let the sauce simmer for 3-4 minutes to thicken slightly. Stir in the Parmesan cheese and Italian seasoning, cooking for another 1-2 minutes until the cheese melts and the sauce is smooth.

  6. Bake the Chicken:
    Return the chicken to the skillet, spooning some sauce over the top of each piece. Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).

  7. Garnish and Serve:
    Garnish with fresh basil (optional) before serving. Serve hot with your favorite side dish.
