Ingredients

  • 4 medium sweet potatoes (scrubbed clean)
  • 1 tablespoon olive oil (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub sweet potatoes and pat dry. Pierce each several times with a fork.
  3. Place on a baking sheet lined with foil or parchment paper. Rub skins with olive oil and sprinkle with salt if desired.
