- 4 medium to large russet potatoes
- 2 tbsp olive oil or melted butter
- 1 tbsp kosher salt
- Optional toppings: sour cream, shredded cheese, chives, bacon bits, butter, black pepper
- Preheat oven to 425°F (220°C).
- Scrub potatoes clean and pat dry.
- Prick each potato several times with a fork.
- Rub potatoes with olive oil or butter and sprinkle with salt.
- Place directly on the oven rack or on a baking sheet.
- Bake for 45–60 minutes, until skins are crisp and a knife pierces the center easily.
- Let cool slightly, slice open, fluff insides with a fork, and add desired toppings.
Notes
- For extra crispy skin, bake directly on the oven rack without foil.
- Use sweet potatoes for a different flavor variation.
