Ingredients

  • 8 oz pasta (penne, rigatoni, or spaghetti)
  • 4 oz goat cheese (soft, plain, or herbed)
  • 2 cups cherry tomatoes
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • ¼ cup fresh basil, chopped
  • ¼ cup grated Parmesan (optional)
  • ½ cup reserved pasta water

Instructions

  • Preheat oven to 400°F (200°C).
  • In a baking dish, toss cherry tomatoes with olive oil, garlic, oregano, red pepper flakes, salt, and pepper.
  • Place the goat cheese in the center of the dish and drizzle with a little more olive oil.
  • Bake for 25-30 minutes, or until tomatoes burst and goat cheese is softened.
  • Meanwhile, cook pasta according to package instructions. Reserve ½ cup pasta water before draining.
  • Remove the baking dish from the oven and mash the goat cheese and tomatoes with a spoon, creating a creamy sauce.
  • Add the cooked pasta and reserved pasta water, stirring until well combined.
  • Garnish with fresh basil and Parmesan (if using).
  • Serve warm and enjoy!
