Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Place the chicken pieces in a bowl.
  3. Add olive oil, garlic, lemon juice, paprika, cumin, coriander, turmeric, cinnamon, allspice, salt, and black pepper.
  4. Toss the chicken well until evenly coated with the marinade.
  5. Arrange the chicken bites in a single layer on the prepared baking sheet.
  6. Bake for 18–22 minutes until fully cooked and lightly browned, turning once halfway through.
  7. Optionally, switch to broil for the last 2–3 minutes for extra color and crispiness.
  8. Remove from oven and let rest briefly before serving.

Notes

  • Use chicken thighs for juicier bites or chicken breasts for a leaner option.
  • Add cayenne pepper or chili powder for extra heat.
  • Serve with garlic yogurt sauce, tahini, hummus, rice, pita, or salads.
  • Marinate the chicken a few hours or overnight for deeper flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days; reheat in oven or skillet to maintain texture.
