Ingredients

  • 1 pound ground chicken
  • 1 small onion, finely grated
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper or lightly grease it.
  2. In a large bowl, combine ground chicken, grated onion, minced garlic, breadcrumbs, egg, chopped parsley, salt, pepper, paprika, and oregano.
  3. Mix until just combined, being careful not to overmix.
  4. Shape the mixture into 8 to 10 evenly sized patties.
  5. Place the rissoles on the prepared baking tray, leaving space between each one.
  6. Lightly brush or spray the tops with olive oil.
  7. Bake for 22 to 25 minutes, flipping halfway through, until golden and cooked through with an internal temperature of 165°F (74°C).
  8. Allow them to rest for a few minutes before serving.
