Baked Chicken Quesadillas are a crispy, cheesy, and satisfying twist on the traditional quesadilla. Made with tender chicken, melted cheese, and savory spices, these quesadillas are baked for an easy, hands-off approach to achieve a perfectly golden exterior.

Ingredients

  1. 2 cups cooked chicken, shredded (rotisserie chicken works great)
    1 cup shredded cheese (cheddar, mozzarella, or Mexican blend)
    1/2 cup diced red onion
    1/2 cup diced bell pepper (any color)
    1/4 cup chopped cilantro (optional)
    1 teaspoon ground cumin
    1 teaspoon chili powder
    1/2 teaspoon garlic powder
    1/2 teaspoon onion powder
    Salt and pepper to taste
    4 large flour tortillas
    2 tablespoons olive oil or melted butter
    Salsa, sour cream, or guacamole for serving (optional)

Instructions

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.

  1. In a large bowl, combine the shredded chicken, shredded cheese, diced onion, diced bell pepper, cilantro, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix well.
  2. Lay the flour tortillas flat and evenly distribute the chicken and cheese mixture across the center of each tortilla. Fold the tortillas in half to enclose the filling.
  3. Brush the tops of the folded tortillas with olive oil or melted butter to help them crisp up nicely in the oven.
  4. Place the assembled quesadillas on the prepared baking sheet and bake for 10-12 minutes, flipping halfway through, until the tortillas are golden brown and crispy on both sides.
  5. Remove from the oven, let cool for a minute, then cut into wedges. Serve with your favorite sides like salsa, sour cream, or guacamole.
