Ingredients

  • 1 ½ pounds boneless, skinless chicken breasts, sliced into thin strips
  • 3 bell peppers (any color), sliced
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice of 1 lime
  • Fresh cilantro (optional, for garnish)
  • Flour or corn tortillas, for serving

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine sliced chicken, bell peppers, and onions. Drizzle with olive oil.
  3. In a small bowl, mix chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper.
  4. Sprinkle the seasoning blend over the chicken and vegetables. Toss until everything is evenly coated.
  5. Spread mixture on a large baking sheet in a single layer.
  6. Bake for 20–25 minutes, stirring halfway through, until chicken is cooked through and veggies are tender.
  7. Remove from oven and squeeze fresh lime juice over the top.
  8. Garnish with cilantro if desired and serve with warm tortillas and favorite toppings.

Notes

  • Slice chicken thinly and evenly for quicker, even cooking.
  • Don’t overcrowd the baking sheet to ensure good caramelization.
  • Use parchment paper for easy cleanup.
  • Great for meal prep — store filling and reheat when needed.
