These Baked Broccoli Cheese Balls are a crispy, cheesy, and healthy snack packed with tender broccoli, cheddar, and Parmesan. Perfect as an appetizer, side dish, or kid-friendly treat, they’re easy to make and baked to golden perfection!

Ingredients

  • 2 cups broccoli florets, finely chopped
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 cup breadcrumbs (panko or regular)
  • 2 eggs, beaten
  • 2 cloves garlic, minced
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • Olive oil spray

Instructions

  1. Preheat Oven:

    • Preheat oven to 375°F (190°C).
    • Line a baking sheet with parchment paper and lightly spray it with olive oil.
  2. Steam the Broccoli:

    • Steam or microwave the chopped broccoli for 3-4 minutes until tender.
    • Drain well and pat dry with a paper towel to remove excess moisture.
  3. Prepare the Mixture:

    • In a large bowl, mix broccoli, cheddar cheese, Parmesan cheese, breadcrumbs, eggs, garlic, onion powder, paprika, salt, pepper, oregano, and thyme until well combined.
  4. Form the Balls:

    • Scoop about 1 tablespoon of the mixture and roll into a ball.
    • Place on the prepared baking sheet. Repeat with the remaining mixture.
  5. Bake:

    • Lightly spray the tops with olive oil to enhance crispiness.
    • Bake for 20-25 minutes or until golden brown and crispy.
  6. Serve:

    • Serve warm with ranch dressing, marinara sauce, or your favorite dip.

Notes

  • Use gluten-free breadcrumbs for a GF version.
  • For extra crispiness, air fry at 375°F for 12-15 minutes.
