Bagel Cucumber Rolls with Smoked Salmon are a light and refreshing appetizer that combines the best of bagels, crisp cucumbers, and rich smoked salmon. These rolls offer the perfect balance of crunch, creaminess, and savory flavor in a healthy, gluten-free alternative.

Ingredients

  1. 2 large cucumbers
1/2 cup cream cheese (or dairy-free cream cheese for a dairy-free version)
1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
    1 tablespoon lemon juice
    1/2 teaspoon garlic powder
    1/4 teaspoon onion powder
    1/4 teaspoon black pepper
4 ounces smoked salmon, sliced into strips
1 tablespoon capers (optional, for garnish)
Fresh dill sprigs (optional, for garnish)

Instructions

Prepare the cucumbers: Slice the cucumbers lengthwise into thin strips using a vegetable peeler, mandolin slicer, or sharp knife. Aim for about 1/8-inch thick slices. Lay the cucumber strips flat on a paper towel to absorb excess moisture.

  1. Make the cream cheese spread: In a small bowl, combine the cream cheese, chopped dill, lemon juice, garlic powder, onion powder, and black pepper. Stir until smooth and well combined. Adjust the seasoning to taste.
  2. Assemble the rolls: Spread a thin layer of the cream cheese mixture onto each cucumber slice. Place a small strip of smoked salmon at one end of the cucumber, then roll it up tightly to create a roll.
  3. Garnish: Arrange the cucumber rolls on a platter. Optionally, top each roll with a caper and a small sprig of fresh dill for added flavor and garnish.
  4. Serve: Chill the rolls for 10-15 minutes before serving, or enjoy immediately!

Notes

  • Variations: Add herbs like chives, parsley, or tarragon to the cream cheese spread, or use avocado inside each roll for a creamy twist.
  • Storage: Store leftover rolls in an airtight container in the fridge for up to 2 days.
  • Freezing: Freezing is not recommended as the cucumber and cream cheese may change texture when thawed.
